Danika’s Gluten Free Vegan Waffles

These waffles are light and fluffy with a crispy exterior.  You may want to cook them just a tad longer than wheat waffles.  We like our waffles with a nutty, wholesome taste.  If you want more of the dessert, bavarian waffle, consider adding a tablespoon of sugar to the batter.

Cook this batter according to your waffle iron instructions (hint… this is a great time to turn your iron on).  Prepare the flax seed mix now by heating 12 tablespoons of hot water.  Once it’s steaming, pour it over 6 tablespoons of ground flaxseed (I like the golden organic kind).  Beat the flaxseed with a fork until it is well mixed with the water.  Be sure there are no lumps before setting aside.  The flax will swell and become gel-like.  That’s normal (and desirable).

Whisk 1/2 cup tapioca flour, 3/4 cup brown rice flour, 1/2 cup white rice flour, and 1 tablespoon baking powder.

In another bowl, whisk 4 tablespoons of melted Nucoa (or another dairy free margarine), 2 cups rice milk and the gelled flax mixture. 

Add the dry flour mixture and whisk well.  You can add a little more rice milk if you want to adjust the consistency. 

Pour into the waffle iron and prepare your toppings!  (We like lingonberries… it reminds me of all those Swedish Christmases I celebrated growing up). 

This recipe is perfect for lazy Saturday mornings.  It’s easy enough for kids to help, and who doesn’t love waffles?  This makes 7 waffles for us.  Need more?  Increasing recipes is a great way for kids to work with fractions.  :)

  1. Just found your site today while looking for gluten-free, vegan waffles. I had to make some substitutions and they still turned out wonderful! I will be starting a blog soon (soon to be certified as a holistic health coach) and was wondering if I could reference your blog/website on occasion? I would, of course, give you complete credit and link you any time that I mention you or any of your recipes, topics, etc.

    I can’t wait to sit and look over your site. I have been considering home schooling my 10 year old son for some time now, but my husband is really agains it. He is in a really fabulous school where there is respect for everyone and children are treated as people, humans…not just some body sitting at a desk being trained to perform. But he had focus issues and I have been struggling with all kinds of remedies rather than drugs. The latest is taking gluten from his diet (and mine). It is a struggle!

      Homeschooling has been such a blessing for us. I really love it. Initially, my husband and I didn’t agree either (and our youngest two were also in a fantastic school). I (personally) think it’s really important to be on the same page with your spouse. I’m glad we waited until we were both committed to the decision (for at least a year). At this point, we both feel God really led us to this path. I’m sure He led us in His timing.

      We have a VillaWare Belgian Waffler. I have no idea where (or when) we got it. We spray it with oil before we pour the batter in…

      Do you subscribe to Clubhouse or Clubhouse Jr? I really love both magazines (so do my kids!).
